Bollinger R.D. 1988, Champagne
I had the opportunity to not only get a taste of a Bollinger R.D. 1988, but also with an excellent goose liver. The match was absolutely perfect, but lets concentrate on the champagne. This Bollinger has aged very well. Stored in a nice way. The special taste that one normally get in very old champagne start to come, so this was an interesting balance between normal Bollinger taste (bread, some yeast etc) and the tropical fruit I feel is coming in older liquids. The bubbles where evenly distributed, and surprisingly active. I almost expected something where the carbon fizz would be hard to notice, but of course, 1988 is not that old. Just old. And good. Darn good. Drink now if you are lucky enough to have some bottles… (+++)
